Something of a catchphrase around here whenever anyone asks anything, "remember, Google is your friend!"
Do you want something other than the plain white background portraits offered by most photographers but not sure what? Try doing a search on Google or Pinterest for fine-art portraiture, film noir portraits, cinematic portraiture, or even fantasy portraits.
Once you find a few you like save them to a pinterest board for easy sharing with your photographer, or if you're like me and prefer to go old-school print them off and put them in a scrapbook to show your photographer at your consultaion.
Speak to your photographer of choice and see if they can suggest something to suit you. It may well be that they already have experience in such work and can show you examples of some they have already done.
*Trade Secret* most photographers do the exact same thing when when looking for inspiration for something new to try out! But don't tell anyone we told you ;)
